Spinach & Sausage Cheese Tortellini

They say a way to an employee’s heart is through their belly and that is just what we do at  Along with our monthly team meetings we have a nice, home cooked, meal for lunch!  Each month, our Health & Wellness committee teams up to find a recipe that is healthy, delicious, and cost effective!

For July, the meal chosen was Spinach & Sausage Cheese Tortellini.



  • 16 oz frozen tortellini
  • 1 small bag fresh spinach
  • 2 cans (15 oz) Italian style diced tomatoes
  • Kielbasa Cooked Sausage
  • 1 block (8oz) cream cheese
  • salt & pepper to taste

Directions: Put all ingredients in the crockpot, chunking up the cream cheese.  Cook on high for 3-4 hours, stirring a couple times while cooking.

This recipe is totally easy, and can be customized to your crowd’s taste buds! We used Kielbasa Cooked Sausage because we didn’t want to give anyone heart burn, but you can use a spicy Italian if you like it a little hot! Some other great subs we would recommend would be ground turkey/beef, chicken sausage, or veggie-filled tortellini with no sausage for those vegetarians.  Get creative! This is too simple to mess up!

Aside from the meal being amazing the cost of “home cooking” is much less than having food catered!  This meal cost $1.71 per person and it fed 13 people and most had second helpings!
